Southern Living, a top lifestyle publication, recently published a collection of the best barbecue in each state titled, "The Great American Barbecue Bucket List", where DOC's Commerce Smokehouse took the Wisconsin slate. This article was then picked up by Travel + Leisure and Food and Wine.
"Wisconsin may be known for its traditional fish boils, but don’t underestimate its power behind the pit. Doc’s owner comes from Birmingham, where he picked up more than a few ideas on how to treat meat properly. In his adopted Milwaukee hometown, he has a strict “sauce on the table, not in the kitchen” rule.
