DOC'S Madison Smokehouse Closed until Further Notice

LOCATED IN THE WEST TOWNE MALL IN MADISON, WI.

Our process is simple yet difficult and we hold true to these Southern barbecue traditions.  The only ingredients we use in our meats are hickory smoke, spice, and time. We've taken local Madison inspiration and added our Southern traditional flair to deliver authentic, mouth-watering smoked meats. Located in West Towne Mall in Madison Mil, we urge you to fuel up on delicious BBQ before you hit the town!

We never sauce meat in the kitchen because we hope you will try the meat on its own, to taste the love and care with which it has been prepared. Then try it with our great regional sauces.

Please note, because everything we smoke takes a lot of time, we may run out. If you have a large order, please call 24 hours in advance so that we may accommodate you. Our delicious smoked meats are also available for catering to events of all sizes.

LA* Caviar
    Black eyed peas, sweet peppers, cilantro, balsamic marinade served with saltines. *Lower Alabama
Sausage and Cheese
    A Memphis classic: sliced sausage, pimento cheese, saltines.
Smoked Onion Dip
    Doc's twist on good 'ole onion dip. Served with house cut chips.
Fried Pickles
    House dill pickles in a light batter served with BBQ ranch.
Smoked Salmon
    Served chilled with toast points and chef's dressing

All plates are sold with a choice of 2 sides, dill pickles and white bread. Add 2 ribs to anything.

    Hickory smoked, flash fried and tossed with dry rub. We don’t sauce ‘em and you shouldn’t either. If you must, try them with our Alabama White Sauce. 5, 10 and 20 wing options
Pig Wings
    Pigs CAN fly! Flash fried pork ribs, tossed in dry rub.

Dressings: Caesar, BBQ ranch, blue cheese, vinaigrette, ranch

House Salad
    Chopped romaine, cherry tomato, cucumber, carrot, egg, cheese.
